A proud Tunisian who loves everything related to olive trees. Born and raised in Sfax, Tunisia I learned the olive oil business early on. My father taught me the importance of recognizing the right time to pick olives, how to get the best olive oil, and how to use each part of olive tree.

In Tunisia, olive trees are viewed with reverence, so we ensure that no part of the olive tree is wasted. When a tree dies we use the wood to carve items, such as kitchen utensils and tables, that last for generations. Olive wood has a soul of its own, when it begins to fade after multiple washes, a simple coating of olive oil restores it to its original glory.
